This One-Pot Taco Dinner is not unique to us (similar recipes exist online and this is inspired by one of them) but this has been modified to fit our household. To use comforting ingredients. 1 pound extra-lean ground turkey or beef
2 cups chopped red or sweet onion (about 1 medium onion)
1 teaspoon minced garlic
2 ¼ cups water
1 16-ounce jar of your favorite salsa (this is where the fun starts)
1 cup fresh or frozen corn (no need to thaw if frozen)
1 cup uncooked white rice
3 tbsp Seanito Seasoning
1 tablespoon hot sauce (optional)
Optional toppings: cheese, additional salsa or hot sauce, shredded lettuce, chopped tomatoes, minced fresh cilantro, guacamole or chopped avocados, chopped green onions, reduced-fat sour cream. It’s taco night, have fun with this!
In a large skillet over medium-high heat, sauté onions in a healthy drizzle of olive oil. Add turkey (or beef) and garlic, stirring to crumble, until meat is browned (about 8-10 minutes). Drain if needed.
Add water, salsa, corn, rice, Seanito Seasoning, and hot sauce to skillet, stirring to combine. Cover and continue cooking over medium heat until rice is done, stirring thoroughly every 5 minutes or so (about 18-20 minutes total cook time).
When water is mostly evaporated or absorbed, remove from heat and let sit 5 minutes uncovered.
Serve with desired toppings.
